Black Calypso Beans
Calypso beans are a delicious addition to pasta salad, soups, casseroles and stews. Cooked Calypso beans combined with rice make a wonderful stuffing for vegetables.
Cooking Instructions: Soak overnight. Rinse, place in large pot and cover with fresh water. Bring water to a boil for 3minutes, reduce heat and simmer, covered, for 30-40minutes until tender. One cup dry yields 2 1/2 cups cooked.
